To buy or not to buy

Silicon Muffin Cups versus Muffin Tins...Vote for your favorite and tell why.

Silicon is not just in the valley
. In the last few years cookware stores have been pushing silicon muffin cups and tins. What do you think? Please add your findings. I tested a recipe for bacon cornbread muffins in both silicon and metal. I found the taste of the muffins cooked in each to be similar but the color of the muffins cooked in the silicon muffin cups to be very pale. I sprayed both muffin cups with Pam and discovered the removal and clean up of the silicon muffin tins to be much easier. From surveys of other consumers--the majority of voters picked metal over silicon for baking nine out of ten times--or a whooping 90% of the time.
Complaints ranged from the silicon being "too wobbly," "too pale," "hard to clean" and just plain awful. Some consumers suggest other uses including making ice cream molds.

Hi Carole,

I responded to your post on Chowhound and then noticed your link. Here is the answer I posted: I have been using silicone for the past year and a half, and I will never go back to metal, glass, or stone. How many of you have bakeware soaking in your sink right now? :o) You just can't beat the easy cleanup. However, all silicone products are not equal. I specifically use Demarle (maker of the Silpat) Flexipans. They are made of the patented combination of silicone and woven glass (for beautiful browning), and you do not have to use any butter, oil, Pam. They're lightweight, won't rust or break, storage is amazing, and you can use soap to clean them. Demarle also sells a wonderful perforated baking sheet to use with all of their bakeware. The sheet helps provide even heat distribution and to stabilize the "floppy" silicone. With the exception of the Silpat and Roul'Pat, Demarle's products can only be purchased through independent reps through Demarle at Home. Because this company is fairly new to the US, many people are not aware of their whole line of products. They also have a lot of fun shapes, so presentation is always beautiful and effortless.
